Peter Clements, British Oak, Blackheath
Based on a traditional foundation, focusing on the demographics of the area and trying to offer something different, but familiar to customers across ranges of age, gender and class.
A two bar operation, the British Oak offers clientele two different experiences, with a quaint beer garden to the rear which is quiet, secluded, and features a chicken house. The front courtyard overlooks the road where customers watch the world go by. The Public bar is less formal, and they enjoy a more personal experience, with a jukebox, but no other machines or piped music. The Saloon bar has no gimmicks, which in itself is its unique selling factor. The clientele, order drinks and sit in their social circles and entertain themselves in the old fashioned style of conversation. The drinks offer is mixed with a range of well-kept cask beer from their Ei Group, Greater London award winning cellar, through to a collection of national keg favourites including a craft rotational keg. They also have a popular, bespoke wine menu that changes seasonally and a very popular Gin Palace. Food is ordered at the bar, which is a Pieminister Pubs brand and serves from opening until 2130hrs every day. To guarantee a perfect serve every time, Peter ensures that, from delivery, the product is looked after and conditioned as the brewer recommends, and that the lines are cleaned with a reputable chemical every 7 days.
The team of staff at the British Oak are trained to dispense and serve every single product correctly and in the right glassware. They clean glass washing machines daily making sure the chemicals are reputable and the correct amounts delivered. They even consider what type of water is available in their local area to determine how much product is used! The cellar is checked on a daily basis and Peter ensures simple and effective procedures are in place for staff to follow including cleaning rotas and cellar logs.
